When Pooja Bavishi set out to establish her ice-cream company, Malai, she was able to do so with an unambiguous, personal view. "I launched Malai as I was looking to honor the tastes that I grew up eating as a first-generation Indian American in a popular and mainstream fashion," she says.

"Everyone is a victim of an ice cream memory from their childhood, which is usually associated with visiting your local ice cream shop for a scoop with loved family members," Pooja says. This nostalgia-infused fusion is what has brought Malai from being a stand-in in local food halls and markets into freezers at grocery stores and pop-up carts all over New York City, and an enticing flagship store in Brooklyn providing both local and national delivery.
